Hummus and potato pizza

Base – may use gluten free bread mix or your own mix eg cornmeal
Tomato paste – optional
Hummus – if you are unable to eat the commercial brand then make your own in bulk and freeze. This is what I do. The main ingredient is chickpeas.
Potato or other vegetable
Herb selection. I use oregano, thyme and basil – fresh from the garden is best!
Garlic – optional
Olive oil

My Version

Make up some gluten free bread mix and spread on your tray.
Add a layer of tomato paste and sprinkle with garlic and herbs if you like.
Spread a layer of hummus – as thick as you like.
Add a layer of thinly cut potato slices
Add a drizzle of olive oil
Cook for 10 mins at 200 degrees Celsius
Turn oven down to 180 degrees Celsius till it is cooked – about 10 to 15 mins.

Experiment to suit!
We have found the combination of hummus and potato both yummy and satisfying!
